Boxing Day was spent with our family & our furbabies with delicious food & family fun with some games & even a little Christmas inspired Photo Booth that my cousins had made up for today
This year we decided to get a really stunning Christmas tree that was firstly easy to assemble & have the lights already on the tree I came across this little beauty from BalsamHill
it arrived very quickly & the tree itself was super easy to assemble it comes in 3 pieces instead of our old tree that was in tiny sections
We got some brand new Disney ornaments for our tree a few I could get from Ebay in Australia but the Cinderella & Belle one is from the USA

What you need to make these gingerbread cupcakes
1/2 cup of butter
1 cup of molasses
1/2 cup of white sugar
1 egg
2 1/2 cups of all purpose flour
1 1/2 teaspoons of baking soda
1 teaspoon of ground cinnamon , ground ginger & cloves
1/2 teaspoon of salt
1 cup of hot water
You need to preheat your oven to 350F degrees " 175C degrees "
place your cupcake liners in a baking pan for cupcakes
In a separate bowl mix all of your dry ingredients together make sure it is all sifted first then add your dry mix to the wet mixture gently stir in the hot water until its all combined together
Then add the mixture to your cupcake liners & bake for 25 - 30 minutes
the mixture may look very runny & that is normal they bake into soft gingerbread

250gram Stick of Butter

2 cups of icing sugar
Grab a mixing bowl & cream the butter add your molasses & spices and cream until its a soft brown colour then add your icing sugar little bit by bit
These are so moist & that buttercream frosting is so creamy & full of that gingerbread flavour

I found some gorgeous home decor pieces for the house in TKmaxx plus some cute little things for my mum & I found this gorgeous rose gold black satchel bag
Jamaica Blue do the most amazing coffee ever its rich creamy & strong in texture
This French toast was delicious me & Bec haven't been on a sister brunch date for awhile so it was really relaxing to just eat some good food & have a look around for Christmas gifts
